The weekend is upon us which means enjoying a pizza is inevitable, right? At least for many of us, we associate the weekend with a time to enjoy delicious food with friends and family, and pizza just so happens to be one of those delicious food options.

If you miss having pizza and are looking for a low-carb diabetic-friendly option, here are two recipes to get you started.

These recipes are so delicious you won’t even miss the heavy carbohydrate options!

Almond Flour & Mozzarella Pizza

(Suggested serving)

Serves: 12

Ingredients:

  • 2 cups almond flour
  • ¾ cup warm water
  • ¼ cup olive oil
  • 2 garlic cloves chopped
  • ½ cup shredded mozzarella cheese
  • ¼ cup tomato paste
  • 1 handful of fresh spinach

Directions:

  1. For the pizza dough, add the almond flour, water, olive oil, and chopped garlic cloves to a large mixing bowl. Whisk to combine. Knead into a ball. Allow the dough to sit covered with a damp cloth for 30 minutes.
  2. Preheat the oven to 425°F. Grease a pizza pan or large baking sheet. Set aside.
  3. Form the dough into a circular pizza shape and transfer onto the pan. Prebake for 10 minutes.
  4. Remove the dough from the oven. Top with the tomato paste, cheese, and fresh spinach. Bake for another 15 minutes or until the cheese has melted.
  5. Remove the pizza from the oven. Cut into 12 servings.

 




 

Cauliflower Pizza

Serves: 6

Ingredients:

  • 1 head cauliflower
  • 1 egg
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 cup of shredded mozzarella cheese
  • ¼ cup pesto sauce
  • 1 Roma tomato, sliced

Directions:

  1. Cut the cauliflower into florets and add it to a food processor. Process until a fine rice type of consistency forms.
  2. Transfer the cauliflower to a microwave-safe bowl. Add ¼ cup water and microwave for 3-5 minutes or until tender.
  3. Drain the water. Add the cauliflower to a large mixing bowl along with the egg. Season with salt and pepper. Stir to combine.
  4. Preheat the oven to 450°F. Line a baking sheet with parchment paper.
  5. Add the cauliflower dough to the baking sheet and flatten into a rectangular shape. Bake for 10 minutes.
  6. Remove the dough from the oven. Top with the pesto sauce, mozzarella cheese, and sliced tomato. Bake for another 10 minutes or until the cheese has melted.
