Who doesn’t love ice cream? I mean, ice cream is a staple dessert and something that many of you may have even grown up enjoying as an after-dinner treat.

The problem with ice cream is that it is often packed with sugar and fat – but not if you make your own!

You can whip up your very own ice cream with only a handful of ingredients, and the best part is that you don’t even need an ice cream maker.

Get your spoons and ice cream bowls ready because these recipes are delicious.

Mint Choco Chip

Serves: 2

Ingredients:

  • 1 cup full-fat unsweetened Greek yogurt
  • 2 freshly chopped mint leaves
  • 1 drop of vanilla crème stevia extract
  • 1 tsp pure vanilla extract
  • 4 Tbsp. unsweetened dark chocolate chips

Directions:

  1. Add the Greek yogurt, mint leaves, stevia, and vanilla extract to a food processor. Blend until smooth.
  2. Stir in the chocolate chips by hand. Freeze for 4 hours or until an ice cream texture is formed.

Chocolate Coconut Cream

Serves: 4

Ingredients:

  • 1 can full-fat coconut milk refrigerated overnight
  • 2 Tbsp. raw unsweetened cocoa powder
  • 1 drop vanilla crème stevia extract
  • 3 Tbsp. unsweetened chocolate chips

Directions:

  1. Remove the coconut cream (the hardened part of the milk) and transfer to a food processor or high-speed blender. Add the cocoa powder and stevia extract. Blend until smooth.
  2. Transfer to a mixing bowl and refrigerate for 1 hour.
  3. Stir in the chocolate chips before serving.

Coffee Ice Cream

Serves: 6

Ingredients:

  • 2 cups full-fat coconut milk
  • ¼ cup brewed and chilled coffee
  • 1 tsp pure vanilla extract
  • 2 drops vanilla crème stevia extract
  • ¼ tsp. xanthan gum

Directions:

  1. Start by adding all ingredients to a food processor or high-speed blender. Blend until smooth.
  2. Transfer to a freezer-safe container. Freeze for about 2 hours.
  3. Remove from the freezer and scoop out as much as you are serving. Add to a blender or food processor again and blend until creamy. Enjoy right away.

Although nothing’s quite like that ice cream you buy in the freezer section, you can get pretty close to enjoying something similar to the real deal making your own ice cream!
