Diabetes & Food: 5 Dishes for the Mediterranean Diet

The Mediterranean Diet is touted as a good option for diabetics. It’s low in sugars and boasts lots of fruits and veggies. Research has indicated that this diet can help prevent inflammation and control blood sugar levels.

But it’s one thing to talk about the Mediterranean Diet and another to actually practice it. Trying to come up with tasty meal ideas can be time-consuming for those just starting to change how they eat.

Here are five yummy dishes to help you out.

#1 Pasta Salad

Put a Greek twist on pasta salad with the addition of peas, artichoke hearts, and tomatoes. A helping of olive oil and lemon juice gives it plenty of flavor. Served with multi-grain pasts, this salad offers resistant starches that can help keep blood sugars from spiking.

#2 Tuna Salad

Give in to your craving for protein with tuna on a bed of lettuce or spinach. This salad can be made with a small amount of mayonnaise to give it some creaminess. Add some capers, onions, peppers, and olives to give it some extra zesty flair.

#3 Mini Skewers

Make up a snack tray with some mini kebab skewers loaded with sliced artichoke hearts, mozzarella, olives, and tomatoes. An olive oil based vinaigrette makes for a great dipping sauce or drizzle to pour over your skewers. These are the ideal appetizer before dinner or just to have while relaxing after a hard day.

#4 Grilled Seafood

Since it is the Mediterranean Diet you’re on, you’ll want to eat plenty of fish. Try a flavorful halibut seasoned with thyme, lemon, and salt. Throw some sliced red peppers and zucchini on the grill to have as sides with the fish.

#5 Stuffed Mushrooms

Yes, you can enjoy stuffed mushrooms as long as they aren’t batter-fried! Fill them up with a stuffing made from peppers, onion, carrot, garlic, celery, Feta cheese, and dried bread. Sprinkle the tops with a little parmesan and black pepper for that touch of crunch you’re expecting.
