3 Food Processor Recipes for Diabetics

The food processor is one of the most valuable kitchen items when you are looking to whip something together quickly. You can make anything from soups to sauces, all with just a food processor.

I am going to share three of my favorite food processor recipes that I promise you will love.

#1. Spicy Salsa

Serves: 16

Ingredients:

  • 5 Roma tomatoes, seeded and chopped
  • 1 handful fresh cilantro
  • ½ red onion, chopped
  • 1 jalapeno pepper, seeded
  • 1 garlic clove, chopped
  • 1 Himalayan sea salt
  • ½ tsp. black pepper

Directions:

  1. Add all the ingredients to a food processor. Blend until smooth. Transfer to a bowl.
  2. Chill for 1 hour before serving.

(Suggested Serving)




#2. 5-Minute Pesto

Serves: 8

Ingredients:

  • ½ cup olive oil
  • 1 cup packed fresh basil leaves
  • ¼ cup pine nuts
  • 2 garlic cloves, chopped
  • Salt & Pepper to taste

Directions:

  1. Add all the ingredients to a food processor. Blend until smooth. Transfer to a bowl. Serve as a dipping sauce for vegetables or with cooked spaghetti squash.

 #3. Homemade Greek Goddess Salad Dressing

Serves: 12

Ingredients:

  • ½ cup unsweetened plain Greek yogurt
  • ½ cup unsweetened plain almond milk
  • 1 Tbsp. freshly squeezed lemon juice
  • 1 Tbsp. chopped green onions
  • 1 Tbsp. freshly chopped parsley
  • 1 Tbsp. freshly chopped shallot
  • Salt & pepper to taste

Directions:

  1. Add all the ingredients to a food processor. Blend until smooth. Transfer to a bowl.
  2. Chill for 1 hour before serving.

Think about all the items you buy at the store that you could be making yourself. Not only is home cooking a money-saver but it can help you skimp on the added sugar and sodium. Making recipes in a food processor is a great starting point when you start to introduce more homemade food into your diet.
