3 Diabetes-Friendly Superfood Desserts

Do you love dessert?

I know I do, and as a Nutrition Consultant, many people may find this shocking. It’s true, I do love a good dessert, and I happen to have a huge sweet tooth!

With that being said, I have found a way to satisfy this sweet tooth with healthier dessert alternatives I don’t have to feel guilty about eating.

I am going to share three of my favorite superfood desserts that even people with diabetes can enjoy.

Let’s dive in.

#1 Vanilla Chai Chia Pudding

Serves: 4

Ingredients:

  • 1 cup unsweetened coconut milk
  • ½ cup chia seeds
  • 1 tsp. pure vanilla extract
  • ½ tsp. cinnamon
  • ¼ tsp. ground nutmeg
  • 1 Tbsp. pure maple syrup
  • Crushed hazelnuts and cocoa nibs (optional)

Directions:

  1. Add all ingredients minus the pure maple syrup to a large mixing bowl. Whisk to combine.
  2. Add in the pure maple syrup. Stir to combine.
  3. Transfer to 1-2 mason jars.
  4. Refrigerate overnight or for at least 6 hours.
  5. Top with the crushed hazelnuts and cocoa nibs. Enjoy once a pudding like consistency has formed.

#2 Chocolate Dipped Bananas

Serves: 4

Ingredients:

  • 1 large frozen banana, sliced
  • ½ cup unsweetened dark chocolate chips
  • ¼ cup crushed peanuts

Directions:

  1. Add the dark chocolate chips to a microwave-safe bowl. Heat the bowl for 15 seconds or until melted.
  2. Add the crushed peanuts to a bowl. Set aside.
  3. Dip the sliced bananas into the melted chocolate, then into into the bowl with the crushed peanuts.
  4. Place the sliced of banana on a parchment-lined baking sheet. Freeze for 10 minutes or until the chocolate has hardened. At this point, you can also insert a toothpick into the banana slices.

#3 Avocado Mint Ice Cream

Serves: 2

Ingredients:

  • 1 frozen banana
  • 1 ripe avocado, sliced
  • 2 splashes unsweetened almond milk
  • 1 handful of fresh mint leaves
  • ½ tsp. pure vanilla extract
  • 1 handful of ice

Directions:

  1. Add all ingredients minus the ice to a high-speed blender. Blend until smooth.
  2. Add in the ice. Blend until smooth.

Next time a sugar craving kicks in, try one of these recipes. Dessert no longer means you have to ruin your healthy eating diet.
