It’s hard to stay away from pasta when you’re a diabetic. Those firm, chewy noodles can cause your blood sugar levels to rise quite a bit. Plus, no one can stop at one serving of macaroni and cheese.

But, it’s necessary!

If you just love pasta dishes, you might be able to replace the traditional wheat flour pasta in some of them with low-carb alternatives.

Zoodles and Other Veggie Pasta

It’s easy to utilize what Mother Nature has to offer for the dinner table. Just make some lovely zucchini noodles using a spiralizer. This hand tool creates long thin noodles from many kinds of vegetables. Zoodles have a very mild flavor, so they are great for pasta dishes.

You can also try roasting a Spaghetti Squash. The inside offers a light yellow ‘meat’ that easily breaks up into thin, spaghetti-like strands.

Shirataki Noodles

These are a traditional Japanese noodle made from yam flour. They have zero calories, carbs, fat, or protein. Basically, the starches in the flour are indigestible, so they pass right through you. It is available in stores in a bag that is filled with water. Some find that they have a strong odor when first opened. However, the smell should go away when you drain the water and rinse them thoroughly. If you like Asian dishes, such as ramen, shirataki is a good alternative to a wheat flour noodle.

Bean Pasta

You can also find ‘pasta’ noodles made from beans, such as black beans and adzuki beans. These are just made with beans and water, reconstituted into noodle form. If you like a hearty, protein-packed meal, these are a good option. The black noodles also look very cool on the plate.

However, they may be softer than traditional pasta. Even though they aren’t supposed to have much flavor, you may want to use this pasta in dishes that go well with beans, such as chili cheese spaghetti.
