It seems like the hottest part of summer comes right before fall hits. When it’s this warm, you don’t want to eat a classic roast or five alarm chili. Instead, try a few of these recipes that are best served cold to keep you cool too.

#1 Tortellini Salad

These cheese filled kinds of pasta are perfect for a filling lunch without having to turn on the oven. Best of all, you can make it up ahead of time and take it to work. Prepare this tasty recipe with prosciutto, figs, and walnuts. Add some fresh lettuce mix and your favorite dressing for flavor.

#2 Turkey & Hummus Sandwich

Make up this sandwich with thin slices of bread to keep the carb count under control. The hummus works as a sandwich spread and pairs well with spinach, bell pepper, and a squirt or two of mustard.

#3 Chickpea Salad

Another hearty salad that is vegetarian-friendly too. Chickpeas are high in protein and make for a very filling meal. This recipe also boasts tomatoes, cucumber, and plenty of herbs and spices, such as mint, parsley, and toasted cumin.

 

#4 Tuna Salad Sandwich

Tunafish is great brain food as it contains Omega-3 fatty acids. As long as you use light mayonnaise and mix in plenty of diced veggies, this is a healthy and filling meal too. Veggies to add can include celery, onion, pickle, or apple.

#5 Chicken Wraps

A flour tortilla filled with rotisserie chicken is surprisingly yummy when cold. Add some hummus, feta cheese, and sun-dried tomatoes to give it a Mediterranean flair. Choose whole wheat for your tortilla to help slow the digestion of the carbohydrates in your meal.

You can turn almost any meal into a cooler version of it for lunches and quick snacks. If there is something you want to make that required baking, consider cooking it at night when the temperature is lower. Things like quiches, pies, and bread are all good when served at room temperature.
