Almond Flour Pizza That Diabetics Will Love!

A zesty, cheesy, saucy pizza is the best way to dine on a Friday night. Sadly, the crust is usually loaded with carbs. Long have diabetics been limited in how much of this treat they can enjoy. But now, there are some pretty good wheat alternatives on the market.

What’s the secret?

Instead of using a wheat flour dough for the crust, you can make up a low-carb almond flour pizza dough. This is a great alternative, and these pizzas look just like the original wheat dough pizza. Yes, it’s low-carb and tasty.

Plus, almond flour is good for diabetics. Research has indicated that almonds can help:

  • improve insulin sensitivity
  • lower blood pressure
  • lower LDL cholesterol levels

These nuts also contain many nutrients, such as magnesium, vitamin E, fiber, manganese, copper, and phosphorous.

Low-Carb Almond Flour Pizza Dough

The recipe for this dough is fairly simple, but it should be noted that it contains a lot of fat. So, it’s best to eat it in moderation. Luckily, you’ll fill up quickly on this pizza. The ingredients are as follows:

  • 5 cups shredded mozzarella
  • 3/4 cup almond flour
  • 2 tablespoons cream cheese
  • 1 egg

#1 Combine the Cheese

Preheat the oven to 425°F. Place the cream cheese and mozzarella into a microwave-safe bowl. Microwave the cheese for one minute and stir. Microwave the cheese for another 30 seconds and stir again. Repeat stirring every 30 seconds until the cheese is melted.




#2 Add the Egg and Flour

Stir in the egg and almond flour. Keep stirring until well mixed. The dough should appear fairly wet and soft.

#3 Spread Out the Dough

Place a sheet of parchment paper on a pan. Pour the dough out onto the sheet. Wet your hands. Spread out the dough until it is roughly pizza shaped. Poke holes in the dough with a fork.

#4 Pre-Cook the Dough

Place the pan into the oven for about 8 to 10 minutes. Remove and check the dough. If there are large bubbles forming, you can pop them with a fork. Return to the oven for another 12 to 14 minutes. Remove the pan. The dough should be slightly browned and have a glossy or shiny appearance.

#5 Top the Pizza Dough

Add your favorite sauces, cheese, and toppings. We recommend lots of veggies. Place the pizza into the oven just long enough for the cheese to melt and brown and the toppings to heat through. This can be between 5 to 10 minutes.
