3 Quick Dinner Recipes for Diabetics

Having a special diet plan doesn’t mean meal preparation needs to take a long time. Here are 3 quick dinner recipes for diabetics.

1. Broiled Scallops with Sweet Lime Sauce

Scallops are more than 80 percent protein and recommended by the Mayo Clinic. They are also a good source of magnesium and potassium. If you are worried about calories, scallops are only 95 calories per 3-ounce serving.

Preheat broiler and set rack 4-inches from the top. Cover cooking surface with foil, and spray with cooking spray. Whisk together oil, lime juice, and honey. Coat scallops in the honey mixture. Lay the scallops down in a single layer on a cooking surface. Broil for about 5 minutes, or until opaque. Flip scallops and cook for another minute.

Serve scallops on warmed plates. Pour remaining juices on top of scallops. Garnish with grated lime peel and a lime wedge.

2. Philly Steak Sandwich

This is a healthy version of the classic sandwich. Try to limit cheddar cheese topping because it is high in fat and calories.

Preheat oven to 350 F. Coat baking pan and frying pan with cooking spray. Sauté thinly chopped peppers and onions for about 3 to 5 minutes or until soft. Add shaved roast beef. Sauté for another couple of minutes. Place beef mixture into each lower half of bun. And, place in baking dish. Top each bun with a couple of tablespoons of cheddar cheese and bake until cheese melts. Remove and serve with top buns.

3. Asparagus, Red Pepper, and Tomato Pizza on French Bread

Store-bought pizza sauce sometimes contains a large amount of sugar. Check the food label in store and choose low sugar a low-sugar option. The Mayo Clinic approves this recipe as a healthy alternative.

Preheat oven to 400 F and lightly coat baking sheet with cooking spray. Mix chopped asparagus, tomatoes, and peppers in small bowl. Add minced garlic and coat evenly. Arrange quartered French bread pieces on a sheet. Add pizza sauce and vegetable mix onto each bread piece. And, sprinkle with mozzarella cheese.
